Ingredients
– 4 ears fresh corn, kernels removed
– 1 red bell pepper, diced
– 1 yellow bell pepper, diced
– 1/2 red onion, finely chopped
– 1/4 cup chopped fresh cilantro
– 2 tablespoons olive oil
– 2 tablespoons red wine vinegar
– 1 tablespoon lime juice
– 1 teaspoon honey
– Salt and black pepper to taste
Instructions
1. – Cut the corn kernels off the cobs and place in a large bowl.
2. – Add the diced bell peppers, chopped red onion, and chopped cilantro.
3. – In a small bowl, whisk together the olive oil, red wine vinegar, lime juice, and honey. Season with salt and pepper.
4. – Pour the dressing over the corn salad and toss gently to coat.
5. – Chill the salad for at least 30 minutes before serving to allow the flavors to meld.
Notes
