Ingredients

– 3 lbs sweet potatoes, peeled and cut into 1-inch cubes

– 1/2 cup unsalted butter, softened

– 1/2 cup granulated sugar

– 2 large eggs

– 1 tsp vanilla extract

– 1/2 tsp ground cinnamon

– 1/4 tsp ground nutmeg

– 1/4 tsp salt

– 2 cups miniature marshmallows


Instructions

1. – Preheat oven to 375°F. Grease a 9×13-inch baking dish.

2. – In a large pot, cover the sweet potato cubes with water and bring to a boil. Reduce heat and simmer until tender, about 15-20 minutes. Drain and mash the sweet potatoes until smooth.

3. – In a large bowl, beat the mashed sweet potatoes, butter, sugar, eggs, vanilla, cinnamon, nutmeg, and salt until well combined.

4. – Spread the sweet potato mixture evenly into the prepared baking dish. Top with the marshmallows.

5. – Bake for 25-30 minutes, or until the marshmallows are golden brown and the casserole is heated through.

Notes
