Ingredients

– 2 cups all-purpose flour

– 1/2 cup unsalted butter, chilled and cubed

– 1/4 cup granulated sugar

– 1/4 cup ice water

– 3 cups mashed sweet potatoes (about 2 large sweet potatoes)

– 1 cup light brown sugar

– 2 large eggs

– 1 cup heavy cream

– 1 teaspoon ground cinnamon

– 1/2 teaspoon ground ginger

– 1/4 teaspoon ground nutmeg

– 1/4 teaspoon salt


Instructions

1. Preheat your oven to 375°F (190°C).

2. In a food processor, pulse the flour, butter, and granulated sugar until the mixture resembles coarse crumbs. Add the ice water and pulse until the dough just begins to come together.

3. Turn the dough out onto a lightly floured surface and gently shape it into a disk. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.

4. In a large bowl, combine the mashed sweet potatoes, brown sugar, eggs, heavy cream, cinnamon, ginger, nutmeg, and salt. Mix until well combined.

5. Roll out the chilled dough into a 9×13-inch rectangle and transfer it to a baking pan. Press the dough into the pan, ensuring it reaches the edges.

6. Pour the sweet potato filling over the crust and spread it evenly.

7. Bake for 35-40 minutes, or until the center is set and a toothpick inserted comes out clean.

8. Allow the bars to cool completely before cutting into squares and serving.

Notes

For a deeper flavor, you can roast the sweet potatoes before mashing them. You can also add a sprinkle of chopped pecans or a drizzle of caramel sauce on top.
