Ingredients
– 3 lbs sweet potatoes, peeled and cubed
– 4 large eggs, separated
– 1/2 cup unsalted butter, melted
– 1/2 cup whole milk
– 1/2 cup granulated sugar
– 1 tsp ground cinnamon
– 1/2 tsp ground nutmeg
– 1/4 tsp salt
Instructions
1. – Preheat oven to 350°F. Grease a 9×13-inch baking dish.
2. – In a large pot, cover the sweet potato cubes with water and bring to a boil. Cook until tender, about 15 minutes. Drain and mash the sweet potatoes until smooth.
3. – In a large bowl, beat the egg yolks until light and fluffy. Stir in the mashed sweet potatoes, melted butter, milk, sugar, cinnamon, nutmeg, and salt. Mix until well combined.
4. – In a separate bowl, beat the egg whites until stiff peaks form. Gently fold the whipped egg whites into the sweet potato mixture.
5. – Transfer the mixture to the prepared baking dish. Bake for 45-55 minutes, or until the top is golden brown and the center is set.
6. – Allow the souffle to cool for 10 minutes before serving. Enjoy warm.
Notes
For a richer flavor, use heavy cream instead of milk. You can also add a splash of vanilla extract or a tablespoon of bourbon for an extra depth of flavor.
