Description

Ingredients

– 1 cup cornmeal

– 1 cup all-purpose flour

– 1/4 cup granulated sugar

– 1 tablespoon baking powder

– 1/2 teaspoon salt

– 1 cup milk

– 2 large eggs

– 4 tablespoons unsalted butter, melted


Instructions

1. – Preheat the oven to 400°F (200°C). Grease a 24-cup mini muffin tin with non-stick cooking spray.

2. – In a large bowl, whisk together the cornmeal, flour, sugar, baking powder, and salt.

3. – In a separate bowl, whisk together the milk, eggs, and melted butter.

4. – Pour the wet ingredients into the dry ingredients and stir just until combined, being careful not to overmix.

5. – Spoon the batter into the prepared mini muffin tin, filling each cup about 3/4 full.

6. – Bake for 15-18 minutes, or until the cornbread poppers are golden brown and a toothpick inserted into the center comes out clean.

7. – Allow the poppers to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.

Notes
