Ingredients
– 1 lb ground beef
– 1 onion, diced
– 3 cloves garlic, minced
– 2 tbsp taco seasoning
– 4 cups beef broth
– 1 (15 oz) can black beans, drained and rinsed
– 1 (15 oz) can kidney beans, drained and rinsed
– 1 (15 oz) can diced tomatoes
– 1 (6 oz) can tomato paste
– Shredded cheese, sour cream, and chopped cilantro for serving
Instructions
1. – In a large pot or Dutch oven, cook the ground beef over medium-high heat until browned and crumbled, 5-7 minutes. Drain excess fat.
2. – Add the diced onion and minced garlic to the pot. Cook for 2-3 minutes until fragrant.
3. – Stir in the taco seasoning and cook for 1 minute.
4. – Pour in the beef broth and add the black beans, kidney beans, diced tomatoes, and tomato paste. Stir to combine.
5. – Bring the soup to a boil, then reduce heat and let simmer for 15-20 minutes, stirring occasionally, until thickened.
