Ingredients

– 16 ounces goat cheese, softened

– 1 tablespoon olive oil

– 1 teaspoon lemon zest

– 1/4 teaspoon salt

– 1/8 teaspoon black pepper

– Crackers, for serving


Instructions

1. In a medium bowl, mix together the softened goat cheese, chopped herbs, olive oil, lemon zest, salt, and pepper until well combined.

2. Line a terrine mold or loaf pan with plastic wrap, leaving some overhang on the sides.

3. Spread a layer of the herbed goat cheese mixture into the prepared mold, pressing it down to create an even layer.

4. Repeat the layering process until all the cheese mixture is used up, finishing with a smooth top layer.

5. Fold the overhanging plastic wrap over the top of the terrine to cover it completely.

6. Refrigerate the terrine for at least 4 hours or up to 2 days.

7. When ready to serve, remove the terrine from the refrigerator and unwrap the plastic. Invert the terrine onto a serving plate and remove the plastic.

8. Slice the terrine and serve with crackers.
