Ingredients

– 1 pound boneless, skinless chicken breasts, cut into 4 pieces

– 1 cup all-purpose flour

– 1 teaspoon garlic powder

– 1 teaspoon onion powder

– 1 teaspoon ground ginger

– 1 teaspoon ground coriander

– 1/2 teaspoon ground cumin

– 1/2 teaspoon ground turmeric

– 1/4 teaspoon cayenne pepper

– 1 cup panko breadcrumbs

– 1/4 cup vegetable oil

– 4 brioche buns, split

– 2 cups shredded cabbage and carrot slaw

– 1/4 cup Thai chili sauce


Instructions

1. In a shallow bowl, combine the flour, garlic powder, onion powder, ginger, coriander, cumin, turmeric, and cayenne. Dredge the chicken pieces in the flour mixture, shaking off any excess.

2. In a large skillet, heat the vegetable oil over medium-high heat. Add the breaded chicken and cook for 3-4 minutes per side, or until golden brown and cooked through.

3. Place the fried chicken on the brioche buns and top with the slaw and Thai chili sauce.

Notes

For a spicier sandwich, increase the amount of cayenne pepper or use a hotter chili sauce. You can also add sliced cucumber or fresh cilantro for additional flavor and crunch.
