Ingredients
– 1 (10-12 lb) bone-in ham
– 1 cup brown sugar
– 2 tbsp Dijon mustard
– 1 tsp ground cloves
– 1 tsp ground cinnamon
– 1/2 tsp ground nutmeg
– 1/4 cup pineapple juice
Instructions
1. – Preheat oven to 325°F.
2. – Score the ham in a diamond pattern, cutting about 1/2 inch deep.
3. – In a small bowl, mix together the brown sugar, Dijon mustard, cloves, cinnamon, and nutmeg.
4. – Rub the brown sugar mixture all over the ham, pressing it into the scored areas.
5. – Place the ham in a roasting pan and pour the pineapple juice around the base.
6. – Bake for 2-2.5 hours, or until the internal temperature reaches 140°F.
7. – Baste the ham with the juices every 30 minutes during baking.
8. – Remove the ham from the oven and let it rest for 15 minutes before slicing and serving.
Notes
For a more caramelized glaze, you can broil the ham for 2-3 minutes at the end. Be sure to keep a close eye on it to prevent burning. Leftovers can be stored in the refrigerator for up to 1 week.
