Description

Ingredients

– 5 oz mixed greens

– 1 cup roasted butternut squash cubes

– 1 cup roasted Brussels sprouts

– 1/2 cup dried cranberries

– 1/4 cup toasted pecans

– 2 tbsp crumbled feta cheese

– 1/4 cup apple cider vinaigrette


Instructions

1. 1. Preheat oven to 400°F. Toss the butternut squash and Brussels sprouts with olive oil, salt, and pepper. Roast for 20-25 minutes, until tender and caramelized.

2. 2. In a large salad bowl, combine the mixed greens, roasted vegetables, dried cranberries, toasted pecans, and feta cheese.
