Description

Ingredients

– 1 (12-16 lb) whole turkey, thawed

– 1 cup unsalted butter, softened

– 2 tablespoons chopped fresh sage

– 2 tablespoons chopped fresh thyme

– 1 tablespoon chopped fresh rosemary

– 2 teaspoons salt

– 1 teaspoon black pepper

– 1 large onion, roughly chopped

– 4 carrots, peeled and roughly chopped

– 4 celery stalks, roughly chopped


Instructions

1. 1. Preheat oven to 325°F.

2. 2. In a small bowl, mix together the softened butter, sage, thyme, rosemary, salt, and pepper.

3. 3. Gently loosen the skin of the turkey and spread half of the butter mixture under the skin. Rub the remaining butter mixture all over the outside of the turkey.

4. 4. Place the chopped onion, carrots, and celery in the bottom of a large roasting pan. Set the turkey on top.

5. 5. Roast the turkey for 2 to 2 1/2 hours, basting every 30 minutes, until the internal temperature reaches 165°F in the thickest part of the breast.

6. 6. Remove the turkey from the oven and let it rest for 30 minutes before carving and serving.

Notes

For a crispier skin, you can pat the turkey dry with paper towels before rubbing on the butter mixture. To make the perfect gravy, use the flavorful pan drippings. Adjust the cooking time as needed based on the size of your turkey.
