Description

These Tropical Chill Coconut Lime Bars are a creamy, no-bake treat bursting with vibrant citrus flavor and a silky smooth coconut texture. Perfect for summer gatherings or as an effortless dessert.


Ingredients

– 1 1/2 cups graham cracker crumbs

– 1/2 cup unsweetened shredded coconut

– 1/4 cup unsalted butter, melted

– 1 (14 oz) can sweetened condensed milk

– 1/2 cup fresh lime juice (about 4 limes)

– 1 (13.5 oz) can full-fat coconut milk

– Zest of 2 limes


Instructions

1. Line an 8×8-inch baking pan with parchment paper, leaving some overhang on the sides for easy removal.

2. In a medium bowl, mix together the graham cracker crumbs, shredded coconut, and melted butter until well combined.

3. Press the graham cracker mixture evenly into the prepared pan.

4. In a separate bowl, whisk together the sweetened condensed milk, lime juice, and coconut milk until smooth.

5. Pour the coconut lime filling over the graham cracker crust and spread it out evenly.

6. Sprinkle the lime zest over the top.

7. Refrigerate the bars for at least 2 hours, or until firm.

8. Use the parchment paper to lift the bars out of the pan. Cut into squares and serve chilled.

Notes

For extra flavor, you can add a pinch of salt to the filling. These bars can be stored in the refrigerator for up to 1 week.
