Elevate your grilled meats, seafood, and veggies with this quick and easy Tropical Island Marinade, packed with bright, island-inspired flavors like pineapple, lime, and coconut.
Ingredients
– 1 cup pineapple juice
– 1/2 cup coconut aminos
– 1/4 cup fresh lime juice
– 2 cloves garlic, minced
– 1 tablespoon fresh grated ginger
– 1 teaspoon ground cumin
– 1 teaspoon smoked paprika
– 1/2 teaspoon red pepper flakes (optional)
– 1/4 cup chopped fresh cilantro
Instructions
1. In a medium bowl, whisk together the pineapple juice, coconut aminos, lime juice, garlic, ginger, cumin, paprika, and red pepper flakes (if using).
2. Add the chopped cilantro and stir to combine.
3. Place your protein (such as chicken, steak, or shrimp) or vegetables in a resealable bag or shallow baking dish. Pour the Tropical Island Marinade over the top and turn to coat evenly.
4. Marinate for 30 minutes to 2 hours in the refrigerator.
5. Preheat grill or broiler to medium-high heat.
6. Remove the protein or vegetables from the marinade and discard the used marinade.
7. Grill or broil the items, turning occasionally, until cooked through and charred to your liking.
Notes
– For an even bolder flavor, marinate for up to 24 hours.
– Brush the protein or vegetables with the marinade during the last few minutes of cooking for extra flavor.
