This homemade Turkey Soup is the ultimate comfort food. Filled with tender chunks of turkey, fresh vegetables, and a rich, flavorful broth, this easy recipe is ready in just 30 minutes.
Ingredients
– 2 tablespoons olive oil
– 1 onion, diced
– 3 carrots, peeled and sliced
– 3 celery stalks, sliced
– 3 cloves garlic, minced
– 4 cups turkey or chicken broth
– 2 cups cooked turkey, shredded or cubed
– 1 bay leaf
– 1 teaspoon dried thyme
– Salt and pepper to taste
– Chopped parsley for garnish
Instructions
1. – In a large pot, heat the olive oil over medium heat.
2. – Add the onion, carrots, and celery. Sauté for 5-7 minutes until softened.
3. – Stir in the garlic and cook for 1 minute until fragrant.
4. – Pour in the broth and add the cooked turkey, bay leaf, and thyme. Season with salt and pepper.
5. – Bring the soup to a simmer and let it cook for 15-20 minutes, until the vegetables are tender.
6. – Remove the bay leaf. Taste and adjust seasoning as needed.
7. – Ladle the soup into bowls and garnish with fresh chopped parsley.
Notes
This Turkey Soup can be made with leftover roasted turkey or rotisserie chicken. For a heartier meal, serve with crusty bread or crackers.
