Ingredients

– 1 large head of green cabbage, thinly sliced

– 1 large onion, diced

– 3 cloves garlic, minced

– 2 cans (14.5 oz each) diced tomatoes

– 4 cups vegetable or chicken broth

– 2 tablespoons tomato paste

– 1 teaspoon paprika

– 1 teaspoon cumin

– 1/2 teaspoon dried oregano

– Salt and pepper to taste

– Chopped fresh parsley for garnish


Instructions

1. In a large pot or Dutch oven, heat a tablespoon of olive oil over medium heat.

2. Add the diced onion and sauté for 5-7 minutes, until softened and translucent.

3. Add the minced garlic and cook for an additional minute, stirring constantly.

4. Add the sliced cabbage to the pot and continue cooking, stirring occasionally, for 5-7 minutes, until the cabbage starts to wilt.

5. Stir in the diced tomatoes, tomato paste, paprika, cumin, oregano, and broth. Season with salt and pepper to taste.

6. Bring the mixture to a boil, then reduce the heat to low and let the stew simmer for 15-20 minutes, or until the cabbage is tender.

7. Serve the Turkish Cabbage Stew hot, garnished with chopped fresh parsley.

Notes

For a heartier meal, you can add cooked chicken or beef to the stew. You can also serve it with crusty bread or over mashed potatoes or rice.
