Ingredients
– 1 cup grated carrots
– 8 ounces cream cheese, softened
– 1/2 cup powdered sugar
– 1 teaspoon ground cinnamon
– 1/2 teaspoon ground nutmeg
– 1/4 teaspoon ground cloves
– 1 cup semisweet chocolate chips, melted
Instructions
1. In a medium bowl, combine the grated carrots, cream cheese, powdered sugar, cinnamon, nutmeg, and cloves. Mix well until fully incorporated.
2. Scoop the carrot mixture by the tablespoonful and roll into smooth, round truffles.
3. In a small bowl, melt the chocolate chips in the microwave or over a double boiler, stirring frequently until smooth.
4. Dip each truffle into the melted chocolate, coating them completely. Place the coated truffles on a parchment-lined baking sheet and refrigerate for at least 30 minutes to set.
