Ingredients

– 6 fresh apricots, halved and pitted

– 1/2 cup honey

– 1/4 cup water

– 2 tablespoons lemon juice

– 1 teaspoon ground cinnamon

– 1 cup full-fat ricotta cheese

– Mint sprigs for garnish


Instructions

1. In a medium saucepan, combine the honey, water, lemon juice, and cinnamon. Bring the mixture to a simmer over medium heat.

2. Add the apricot halves to the simmering liquid, cover, and poach for 10-15 minutes, or until the apricots are softened and translucent.
