Description

Indulge in the vibrant and irresistible flavors of Ube Brownie Cookies – a delightful twist on classic brownies with a rich, fudgy texture and a gorgeous purple hue.

Ingredients

– 1 cup (2 sticks) unsalted butter, melted

– 2 cups granulated sugar

– 1 cup ube (purple yam) puree

– 4 large eggs

– 1 teaspoon vanilla extract

– 1/2 teaspoon salt

– 3/4 cup unsweetened cocoa powder

– 1 cup all-purpose flour

Instructions

1. 1. Preheat your oven to 350°F (177°C). Line a large baking sheet with parchment paper.

2. 2. In a large bowl, whisk together the melted butter and granulated sugar until well combined.

3. 3. Add the ube puree, eggs, and vanilla extract, and mix until smooth.

4. 4. In a separate bowl, sift together the salt, cocoa powder, and all-purpose flour.

5. 5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.

6. 6. Using a cookie scoop or spoon, portion the dough into 12 equal-sized balls and place them on the prepared baking sheet, spacing them about 2 inches apart.

7. 7. Bake for 12-15 minutes, or until the edges are set and the centers are still slightly soft.

8. 8. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

For a chunkier ube texture, you can fold in small chunks of ube puree into the batter before baking. These cookies can be stored in an airtight container at room temperature for up to 5 days.
