Ingredients

– 1 pound ground beef

– 1 large onion, diced

– 3 cloves garlic, minced

– 1 head green cabbage, chopped

– 2 (14.5 oz) cans diced tomatoes

– 4 cups beef or chicken broth

– 2 tablespoons tomato paste

– 1 teaspoon dried oregano

– 1 teaspoon dried basil

– Salt and pepper to taste


Instructions

1. In a large pot or Dutch oven, cook the ground beef over medium-high heat until browned and crumbled, 5-7 minutes. Drain any excess fat.

2. Add the onion and garlic to the pot and sauté for 2-3 minutes until fragrant.

3. Stir in the chopped cabbage, diced tomatoes, broth, tomato paste, oregano, and basil. Season with salt and pepper to taste.

4. Bring the soup to a boil, then reduce the heat and simmer for 10-15 minutes, or until the cabbage is tender.

5. Serve hot, garnished with fresh parsley if desired.

Notes

This soup can be made ahead of time and reheated when ready to serve. It also freezes well for up to 3 months.
