Instructions
1. – In a large mixing bowl, combine the ground venison, salt, black pepper, garlic powder, paprika, and cayenne pepper. Mix well until the seasonings are evenly distributed.
2. – If making links, stuff the seasoned venison mixture into sausage casings, tying off into individual links.
3. – For a solid summer sausage, pack the seasoned venison mixture into a loaf pan or sausage mold.
4. – Smoke or bake the sausage at 225°F for 2-3 hours, or until the internal temperature reaches 160°F.
