This Weight Watchers Taco Soup is a hearty, flavorful, and guilt-free meal that’s perfect for busy weeknights. Made with lean ground turkey or chicken, beans, corn, and a blend of spices, this soup is packed with protein and fiber to keep you satisfied.
Ingredients
– 1 lb ground turkey or chicken
– 1 onion, diced
– 3 cloves garlic, minced
– 1 packet taco seasoning
– 1 (15 oz) can black beans, drained and rinsed
– 1 (15 oz) can kidney beans, drained and rinsed
– 1 (15 oz) can corn, drained
– 1 (28 oz) can diced tomatoes
– 4 cups low-sodium chicken broth
– 2 tbsp chopped fresh cilantro
– Salt and pepper to taste
Instructions
1. – In a large pot or Dutch oven, cook the ground turkey or chicken over medium-high heat until browned, 5-7 minutes, making sure to crumble the meat as it cooks.
2. – Add the diced onion and minced garlic, and cook for 2-3 minutes until fragrant.
3. – Stir in the taco seasoning and cook for 1 minute.
4. – Add the black beans, kidney beans, corn, diced tomatoes, and chicken broth. Bring the soup to a simmer and let it cook for 15-20 minutes, stirring occasionally.
5. – Remove from heat and stir in the chopped cilantro. Season with salt and pepper to taste.
6. – Serve hot, garnished with additional cilantro, shredded cheese, or crushed tortilla chips if desired.
Notes
– For a thicker soup, you can blend or mash some of the beans.
– Swap in ground chicken or turkey breast for a leaner protein.
– Customize the spice level by adjusting the amount of taco seasoning.
