Ingredients
– 1 lb ground beef
– 1 onion, diced
– 3 cloves garlic, minced
– 2 tbsp chili powder
– 1 tsp cumin
– 1 tsp oregano
– 1 tsp salt
– 1/2 tsp black pepper
– 1 (15 oz) can diced tomatoes
– 1 (15 oz) can kidney beans, drained and rinsed
– 1 (15 oz) can pinto beans, drained and rinsed
– 2 cups beef broth
Instructions
1. – In a large pot or Dutch oven, cook the ground beef over medium-high heat until browned and crumbled, 5-7 minutes.
2. – Add the diced onion and minced garlic, and cook for 2-3 minutes until fragrant.
3. – Stir in the chili powder, cumin, oregano, salt, and pepper. Cook for 1 minute to toast the spices.
4. – Pour in the diced tomatoes, kidney beans, pinto beans, and beef broth. Bring the mixture to a boil.
5. – Reduce the heat to low and let the chili simmer for 20-25 minutes, stirring occasionally, until thickened to your desired consistency.
6. – Taste and adjust seasonings as needed.
Notes
For a thicker chili, let it simmer for a few extra minutes. Top with your favorite garnishes like shredded cheese, diced onions, or sliced jalapeños.
