This hearty and comforting White Bean Chicken Chili is packed with bold flavors and nutrients. Made with tender chicken, creamy white beans, and a blend of spices, it’s the perfect solution for busy weeknights or chilly weekends.
Ingredients
– 1 lb boneless, skinless chicken breasts, diced
– 2 cans (15 oz each) white beans, drained and rinsed
– 1 onion, diced
– 2 bell peppers, diced
– 3 cloves garlic, minced
– 2 tbsp olive oil
– 2 tsp ground cumin
– 1 tsp chili powder
– 1 tsp dried oregano
– 1 tsp salt
– 1/2 tsp black pepper
– 4 cups chicken broth
Instructions
1. – In a large pot or Dutch oven, heat the olive oil over medium heat.
2. – Add the diced onion and bell peppers. Sauté for 5-7 minutes until softened.
3. – Stir in the minced garlic and sauté for 1 minute until fragrant.
4. – Add the diced chicken, cumin, chili powder, oregano, salt, and pepper. Cook for 3-4 minutes, stirring occasionally, until the chicken is lightly browned.
5. – Pour in the chicken broth and add the drained and rinsed white beans.
6. – Bring the mixture to a boil, then reduce the heat and let it simmer for 20-25 minutes, stirring occasionally, until the chili has thickened.
7. – Taste and adjust seasoning as needed.
8. – Serve hot, garnished with your favorite toppings such as shredded cheese, diced avocado, or chopped cilantro.
Notes
– For a creamier texture, you can mash or purée a portion of the white beans before adding them to the chili.
– Customize the heat level by adjusting the amount of chili powder.
– This chili can be made in advance and reheated. It also freezes well for up to 3 months.
