Ingredients
– 1 lb boneless, skinless chicken breasts, cubed
– 2 tbsp olive oil
– 1 onion, diced
– 3 cloves garlic, minced
– 2 tsp chili powder
– 1 tsp cumin
– 1/2 tsp smoked paprika
– 1/4 tsp cayenne pepper
– 1 (15 oz) can diced tomatoes
– 1 (15 oz) can white kidney beans, drained and rinsed
– 2 cups low-sodium chicken broth
– 2 cups shredded white cheddar cheese
– 2 apples, peeled, cored, and diced
– Salt and pepper to taste
Instructions
1. – In a large pot or Dutch oven, heat the olive oil over medium heat.
2. – Add the diced onion and sauté for 5-7 minutes, until translucent.
3. – Stir in the minced garlic and sauté for 1 minute, until fragrant.
4. – Add the cubed chicken, chili powder, cumin, smoked paprika, and cayenne pepper. Cook for 5-7 minutes, until the chicken is lightly browned.
5. – Pour in the diced tomatoes, white kidney beans, and chicken broth. Bring the mixture to a boil, then reduce heat and let simmer for 15-20 minutes.
6. – Stir in the diced apples and shredded white cheddar cheese. Cook for an additional 5 minutes, until the cheese is melted and the apples are tender.
7. – Season with salt and pepper to taste.
8. – Serve the White Cheddar & Apple Chicken Chili hot, garnished with extra shredded cheese and chopped parsley, if desired.
