Description
This creamy, comforting white chicken chili is made easy in the slow cooker. Tender shredded chicken, white beans, and a blend of spices come together for a delicious and satisfying meal that’s perfect for busy weeknights or cozy weekends.
Ingredients
– 1 lb boneless, skinless chicken breasts
– 2 (15 oz) cans white beans, drained and rinsed
– 1 (32 oz) carton low-sodium chicken broth
– 1 (4 oz) can diced green chiles
– 1 onion, diced
– 3 cloves garlic, minced
– 1 tsp ground cumin
– 1 tsp dried oregano
– 1/2 tsp ground coriander
– 1/4 tsp cayenne pepper (or more to taste)
– Salt and black pepper to taste
– Chopped fresh cilantro, for serving
– Lime wedges, for serving
Instructions
1. – Place the chicken breasts in the slow cooker.
2. – In a medium bowl, combine the white beans, chicken broth, green chiles, onion, garlic, cumin, oregano, coriander, and cayenne. Season with salt and pepper.
3. – Pour the bean mixture over the chicken in the slow cooker.
4. – Cover and cook on low for 5-6 hours, until the chicken is tender and cooked through.
5. – Remove the chicken from the slow cooker and shred it using two forks.
6. – Return the shredded chicken to the slow cooker and stir to combine.
7. – Serve the white chicken chili hot, garnished with fresh cilantro and lime wedges.
Notes
– For a spicier chili, add more cayenne pepper to taste.
– This chili can be made ahead and refrigerated or frozen for later.
