Ingredients
– 1 lb boneless, skinless chicken breasts, cubed
– 1 tablespoon olive oil
– 1 onion, diced
– 3 cloves garlic, minced
– 2 teaspoons ground cumin
– 1 teaspoon dried oregano
– 1/2 teaspoon chili powder
– 1/4 teaspoon cayenne pepper (optional, for heat)
– 4 cups chicken broth
– 2 (15 oz) cans white beans, drained and rinsed
– 1 (4 oz) can diced green chiles
– Salt and pepper to taste
– Toppings: shredded cheese, chopped cilantro, sour cream, crushed tortilla chips
Instructions
1. – In a large pot or Dutch oven, heat the olive oil over medium heat. Add the cubed chicken and cook until browned, about 5-7 minutes.
2. – Add the diced onion and minced garlic to the pot. Cook for 2-3 minutes, until the onion is translucent.
3. – Stir in the cumin, oregano, chili powder, and cayenne pepper (if using). Cook for 1 minute to toast the spices.
4. – Pour in the chicken broth and add the white beans and diced green chiles. Bring the mixture to a simmer and let it cook for 15-20 minutes, until the chicken is cooked through and the flavors have melded.
5. – Season with salt and pepper to taste.
6. – Serve the white chicken chili soup hot, garnished with your desired toppings.
Notes
For a thicker consistency, you can mash some of the white beans against the side of the pot. Feel free to adjust the spice level by adding more or less cayenne pepper. This soup also freezes well for easy meal prep.
