Description

This authentic, top-rated white chicken chili is a hearty, flavorful dish that’s perfect for busy weeknights. Made on the stove top in just 30 minutes, it’s a comforting and delicious meal the whole family will love.

Ingredients

– 1 lb boneless, skinless chicken breasts, cubed

– 2 cans (15 oz each) white beans, drained and rinsed

– 1 can (4 oz) diced green chiles

– 1 onion, diced

– 3 cloves garlic, minced

– 2 tsp ground cumin

– 1 tsp dried oregano

– 1 tsp chili powder

– 1/2 tsp salt

– 1/4 tsp black pepper

– 3 cups chicken broth

– Shredded cheese, sour cream, and chopped cilantro for serving

Instructions

1. – In a large pot or Dutch oven, sauté the chicken over medium-high heat until lightly browned, about 5 minutes.

2. – Add the onion and garlic and cook for 2-3 minutes, until fragrant.

3. – Stir in the white beans, green chiles, cumin, oregano, chili powder, salt, and pepper. Pour in the chicken broth and bring to a simmer.

4. – Reduce heat to medium-low and let the chili simmer for 20 minutes, stirring occasionally, until the flavors have melded and the chili has thickened.

5. – Serve the white chicken chili hot, topped with shredded cheese, a dollop of sour cream, and chopped fresh cilantro.

Notes

For a spicier chili, add an extra can of diced green chiles or a pinch of cayenne pepper. You can also use rotisserie chicken to save time. Leftovers can be stored in the refrigerator for up to 4 days or frozen for up to 3 months.
