Ingredients
– 1 lb boneless, skinless chicken breasts
– 8 oz lasagna noodles, broken into 1-inch pieces
– 1 onion, diced
– 3 cloves garlic, minced
– 4 cups chicken broth
– 2 cups heavy cream
– 1 tsp dried basil
– 1 tsp dried oregano
– 1/2 tsp salt
– 1/4 tsp black pepper
– 1/4 cup grated parmesan cheese, for serving
Instructions
1. 1. In a large pot, bring 4 cups of water to a boil. Add the chicken breasts and cook for 15-20 minutes until cooked through. Remove the chicken and shred or chop it into bite-sized pieces.
2. 2. In the same pot, bring the chicken broth to a simmer over medium heat. Add the broken lasagna noodles and cook for 8-10 minutes, until tender.
3. 3. Stir in the shredded chicken, onion, garlic, heavy cream, basil, oregano, salt, and pepper. Simmer for 5-10 minutes, until the flavors have melded.
4. 4. Serve the White Chicken Lasagna Soup hot, garnished with grated parmesan cheese.
Notes
For a creamier soup, use 3 cups of heavy cream instead of 2. You can also add a pinch of red pepper flakes for a bit of heat.
