Description

Ingredients

– 1 lb ground beef

– 1 onion, diced

– 3 cloves garlic, minced

– 4 cups chicken broth

– 2 cups heavy cream

– 8 oz lasagna noodles, broken into pieces

– 1 cup shredded mozzarella cheese

– 1/2 cup grated Parmesan cheese

– 1/4 cup chopped fresh basil

– Salt and pepper to taste


Instructions

1. – In a large pot or Dutch oven, cook the ground beef over medium-high heat until browned and crumbled, 5-7 minutes. Drain excess fat.

2. – Add the diced onion and minced garlic to the pot. Cook for 2-3 minutes until fragrant.

3. – Pour in the chicken broth and heavy cream. Bring the mixture to a simmer.

4. – Add the broken lasagna noodles and cook for 15-20 minutes, or until the noodles are tender.

5. – Stir in the mozzarella and Parmesan cheeses until melted and well combined.

6. – Remove from heat and stir in the chopped fresh basil.

7. – Season with salt and pepper to taste.

8. – Serve hot, garnished with additional basil if desired.

Notes

For a thicker soup, you can let it simmer for a few extra minutes. You can also add in sautéed mushrooms or spinach for extra veggies. This soup reheats well and can be stored in the refrigerator for up to 4 days.
