Ingredients

– 3 medium oranges

– 1 cup white sugar

– 1 cup water


Instructions

1. Peel the oranges, removing the zest in long strips, avoiding the white pith.

2. In a saucepan, bring the water to a boil. Add the orange peels and boil for 15 minutes, then drain.

3. Return the blanched peels to the saucepan and add the sugar and 1 cup of fresh water. Bring to a simmer and cook for 45-60 minutes, stirring occasionally, until the peels are translucent and the liquid has thickened to a syrup.

4. Remove the peels from the syrup using a slotted spoon and place them on a parchment-lined baking sheet. Allow to cool and dry, about 2 hours.

5. Once dry, the candied orange peels can be stored in an airtight container for up to 2 weeks.

Notes

For a chewier texture, cook the peels for a shorter time. For a crunchier texture, cook them longer. The candied peels can also be tossed in additional sugar for extra sweetness.
