Ingredients
– 1 package (20 oz) cheese tortellini
– 2 tablespoons olive oil
– 3 cloves garlic, minced
– 1 can (14.5 oz) diced tomatoes
– 2 cups fresh baby spinach
– 1 cup heavy cream
– 1/2 cup grated Parmesan cheese
– 1 teaspoon dried basil
– 1/2 teaspoon salt
– 1/4 teaspoon black pepper
Instructions
1. Bring a large pot of salted water to a boil. Cook the tortellini according to package instructions until al dente. Drain and set aside.
2. In a large skillet, heat the olive oil over medium heat. Add the garlic and sauté for 1 minute, until fragrant.
3. Add the diced tomatoes (with their juice) and the fresh spinach to the skillet. Cook for 2-3 minutes, stirring occasionally, until the spinach is wilted.
4. Reduce the heat to low and stir in the heavy cream, Parmesan cheese, dried basil, salt, and pepper. Simmer for 2-3 minutes, until the sauce has thickened slightly.
5. Add the cooked tortellini to the sauce and toss gently to coat. Serve immediately, garnished with additional Parmesan cheese and fresh basil, if desired.
Notes
This dish can be easily customized by adding your favorite protein, such as grilled chicken or shrimp. For a heartier meal, serve with a side salad or crusty bread.
