Ingredients
– 2 cups all-purpose flour
– 1 teaspoon baking soda
– 1 teaspoon ground cinnamon
– 1/4 teaspoon ground cloves
– 1/4 teaspoon ground nutmeg
– 1/2 cup unsalted butter, softened
– 1 cup granulated sugar
– 3 large eggs
– 1 cup honey, plus more for drizzling
– 1/2 cup buttermilk
– 1 teaspoon vanilla extract
Instructions
1. Preheat oven to 350°F (175°C). Grease a 9-inch round baking pan and line the bottom with parchment paper.
2. In a medium bowl, whisk together the flour, baking soda, cinnamon, cloves, and nutmeg. Set aside.
3. In a large bowl, cream the butter and sugar together until light and fluffy, about 3-5 minutes. Beat in the eggs one at a time, then stir in the 1 cup of honey, buttermilk, and vanilla.
4. Gradually fold the dry ingredients into the wet ingredients until just combined, being careful not to overmix.
5. Pour the batter into the prepared baking pan and smooth the top.
6. Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
7. Allow the cake to cool in the pan for 10 minutes, then invert it onto a wire rack to cool completely.
8. Drizzle additional honey over the top of the cooled cake and serve.
Notes
Store the cake in an airtight container at room temperature for up to 4 days. The cake can also be frozen for up to 2 months.
