Description

Ingredients

– 8 ounces capellini pasta

– 2 lemons, juiced and zested

– 1/4 cup olive oil

– 1/4 cup fresh parsley, chopped

– 2 tablespoons fresh basil, chopped

– 1 teaspoon Dijon mustard

– Salt and pepper to taste


Instructions

1. Bring a large pot of salted water to a boil. Cook the capellini pasta according to package instructions until al dente. Drain and rinse with cold water to cool completely.

2. In a large bowl, whisk together the lemon juice, zest, olive oil, Dijon mustard, and a pinch of salt and pepper.

3. Add the cooked and cooled capellini pasta to the dressing and toss to coat evenly.

4. Fold in the chopped parsley and basil until well combined.

5. Taste and adjust seasoning as needed. Serve chilled or at room temperature.

Notes
