  • 2 tablespoons: olive oil or vegetable oil

  • 2 red bell peppers, sliced

  • 1 medium yellow onion, sliced

  • 2-pound: beef (chuck roast or round roast).

  • 2 tablespoons taco seasoning (a mixture of Chili Powder, Cumin, Salt, black pepper freshly ground, paprika, garlic powder, onion powder, oregano dried and pepper flakes).

Step by Step Instructions

Step 1

Set the instant pot on the “Saute” function and add the olive oil, the red peppers sliced, fry them with stirring until they get nice color. Remove them to a separate plate

Step 2

Add onion sliced and follow the same process with them. Remove them aside

Step 3

Add the second remaining tablespoon of olive oil with the chuck roast. Fry until is browned on both sides for about 5 min.

Step 4

Add the combine of taco seasoning and water, Set the instant pot to high pressure for 1 hour. When the cook time is over, Release the pressure naturally for 10 minutes.

Step 5

Remove the cooked roast to a large bowl, shred it using 2 forks with discard any fat and set it aside.By using the “saute” function with the lid off, allow the liquid which rest in the inner pot to reduce by about half.

Step 6

Add the browned onion and peppers sliced to the shredded beef and mix them or serve them in the side.
