  • ½ cup panko crumbs

  • ¼ cup grated Parmesan cheese

  • ¼ teaspoon of basil

  • ¼ teaspoon of oregano

  • ¼ teaspoon of cayenne pepper

  • 2 fresh zucchini

  • ¼ cup egg whites

Step by Step Instructions

Step 1

In a medium bowl, mix together the crumbs, cheese, basil, oregano, and cayenne pepper.

Step 2

Cut the zucchini into wedges not more than half-inch thick after washing well with leaving it unpeeled.

Step 3

Put the whites of egg in a shallow bowl. On another plate put the mixture of crumbs.

Step 4

Dip the zucchini wedges in the egg whites, then place it in the crumbs mixture to coat.

Step 5

In a single layer of air fryer pan, place the wedges and spray it lightly with canola oil.

Step 6

Adjust your air fryer temperature to 350 degrees and cook it for about 6 minutes for each side.
