Ingredients

  • 3 Pounds Chuck roast

  • 1 Cloves garlic thinly sliced

  • 1 Tablespoon oil

  • 3 Teaspoon flavored vinegar

  • 1/2 Teaspoon pepper

  • 1/2 Teaspoon rosemary

  • 1 Tablespoon butter

  •  1/2 Teaspoon thyme

  • 1/4 Cup balsamic vinegar
  • 1 cup Beef broth

Step by Step Instructions

Step 1

Cut slits in the roast and stuff garlic slices all over

Step 2

In a medium bowl add flavored vinegar, rosemary, pepper, thyme and rub the mixture over the chuck roast.

Step 3

Set your instant pot to “sauté” function and add oil, allow the oil to heat up.

Step 4

Add the chuck roast and brown each side (5 minutes for each side).

Step 5

Remove the chuck roast out and keep it on the side.

Step 6

Add butter, broth, balsamic vinegar and deglaze the pot.

Step 7

Transfer the roast back and cover the pot, cook on HIGH pressure for 40 minutes.

Step 8

Let the pressure release quickly.

Step 9

Serve. Enjoy!
